You need of full fat milk.

Preparation of the cottage cheese- heat the milk in a heavy bottom pan. Once it begins to boil add the lime juice and turn off the flame..

Stir the milk till it begins to curdle and the cottage cheese begins to separate..

Strain the cottage cheese in a muslin cloth. Wash the cottage cheese under running water for few minutes so that smell of the lime is gone..

Squeeze the cloth to drain out the excess water then hang it for half an hour to drain more water is remaining..

Take the cottage cheese and start kneading with the heel of your palm for about 10 minutes till its nice and smooth..

Take a non stick pan, heat it on a low flame..

Add the Jaggery and allow it to melt, add the cottage cheese and mix them well..

Keep stirring the mixture on a low flame for about 10-12 minutes till the whole thing comes as a mass..

Transfer it to a plate and allow it to cool down for 5 minutes. Dont wait for it to come to room temperature as it will harden and it works be difficult to give shape to it..

Take the mould and grease it with ghee, give shape to the sondesh with the help of mould..

Serve warm or cold..
