  1. Heat oil and temper nigella seeds and green chillies.

  2. Add the sliced vegetables and saute well adding salt and turmeric powder and cover.

  3. As it is soft and the methi leaves and stir fry,covering it.

Methi Vadi Nu Shaak is a very popular curry from Gujarat.

Fresh fenugreek and sun dried lentil nuggets are cooked with yogurt and spices.

If do not like the bitter taste of fenugreek leaves so to balance out the taste you can add sugar at this.

Personally I prefer the slight bitter taste in my methi bhaji, so I have skipped sugar.

Add fenugreek as well and stir nicely.
