Bitter leaf Soup also known as (Ofe Onugbu / Obe efo Elewuro or Miyan shuwaka) is a delicious traditional Nigerian soup.

It is prepared with a bitter leaf (Vernonia amygdalina) and although the name suggest that it is a bitter soup, that's not the case.

The bitter leaves used for this soup ,are properly washed and squeezed ,until there is only a slight taste of bitterness left.

  1. It’s 1 kg of beef.

  2. Prepare Half of kg goat meat.

  3. It’s 3 of knorr cubes.

  4. Prepare 4 cups of raw palm nut.

  5. Prepare 1 of large dry fish.

  6. Prepare 1 cup of shredded stock.

  7. It’s 1 of wrap ogiri.

  8. Prepare 1 tablespoon of grounded Cameron pepper.

  9. Prepare 2 tablespoons of grounded crayfish.

  10. It’s 2 of heap tablespoons of ground achi.

  11. Prepare 2 of hand full of washed bitter leaves.

  12. You need to taste of Salt.

Bitter Leaf Soup, also known as Ofe Onugbu is a popular Nigerian soup.

Bitter leaf Soup is peculiar to the Igbo tribe of Eastern Nigeria.

A lot of non-Igbos shy away from bitter leaf soup (Well, I did for the longest time) because they think that, true to it's name, it is a very bitter soup.

In this video, I am showing you how to make Bitter-leaf soup, a dish commonly eaten by those from the Eastern part go Nigeria.

Bitter Leaf Soup(Ofe Onugbu) step by step

  1. Wash and season your meat with two knorr cubes and salt, the boil till tender, half way boiling your meat add the stock fish.

  2. Boil and extract the juice from your palm nut then pour in your cooking pot and set on fire, allow to Cook for ten minutes.

  3. Next add the meat and meat stock to the pot then continue to cook for about ten minutes, then add the dry fish and pepper cook for few more minutes then the achi and allow to start thickening.

  4. Lastly, add the bitter leaf, taste and adjust the taste with the remaining knorr cube and salt, allow to thicken to your desired consistency then bring down.

Ofe Onugbu is a popular soup in the Eastern region of Nigeria.

It is the Igbo bitterleaf soup and the key ingredient for this soup as the name implies is Onugbu (bitter leaves) with cocoyam used as thickener for the soup.

I enjoy bitter leaf soup and it amuses me when people say they don't like bitter leaf soup because it's bitter.
