Rhubarb Maple Sauce. Rhubarb cooked down into a sauce with added maple syrup is a combination of sweetness and tartness that compliment each other perfectly. These two ingredients meet in the middle for a delicious piquancy of flavor. My husband ate this whole bowl in one sitting!

Ingredients of Rhubarb Maple Sauce

  1. Prepare 4 cups of rhubarb sliced.

  2. Prepare 2/3 cup of maple syrup.

  3. You need 1/2 teaspoon of cardamon.

The original Paleo recipe uses maple syrup, yum!

The Keto variation is ever so easy, just subbing in your favorite liquid Low Carb sweetener.

And, of course, for GAPS we use honey!

But you can also customize your rhubarb sauce, adding spices or other fruits according to your preferences.

I usually swirl in some all-fruit jam to cut down on the sugar needed, but I like to keep the focus on the rhubarb flavor rather than adding spices.
