Chakka Pradhaman/ Jackfruit Kheer. Chakka Pradhaman - Jackfruit Kheer or Payasam is a traditional sweet delicacy from God's own country, Kerala. I prepared this as a vegan kheer, by adding coconut milk instead of regular milk. Basically, this recipe is prepared by cooking the jackfruit pieces and then it is pureed.
Grind it in the jar and strain the liquid through a tea strainer.
This is the first milk and will be thick.

Making this Pradhaman used to take a lot of time as a lovely Jackfruit Jam called Chakka Varatti was prepared!
Then fresh Coconuts used to be grated and the milk extracted.
These days we get packed Chakka Varatti in the market.
It can also be sourced online and brands like Thankam and Double Horse sell readymade Chakka Varatti.
Chakka Pradhaman/ Jackfruit Kheer instructions

Dissolve the jaggery in 1/2 cup of water and strain for impurities..

Add the chakka varatti to this jaggery syrup and let mix it well, until the varatti dissolves and mix well with the syrup..

Now add the thin coconut milk and let everything boil for 6 to 7 minutes..

Remove from heat and add the thick coconut milk. Mix well..

Add cardamom powder and mix well..

Heat a small frying pan with ghee and fry the coconut pieces till they turn brown..

Also add cashew nuts and fry..

Add this to the pradhaman..

The seeds are removed from the jackfruit and cut into small pieces. The fruit is then cooked with ghee and jaggery: it eventually reaches a paste- or jam like consistency..
