Sesame Gajak. A crispy textured treat, Gajak is made using jaggery and sesame seeds mostly. While jaggery is known to increase immunity and sesame seeds are hot in nature with prevents the cold from affecting the body. This delicious treat will make you enjoy both the ingredients in one dish.
It is a dry sweet made of sesame seeds (til) or peanuts and jaggery.
The til is cooked in the raw sugar syrup and set in thin layers, which can be stored for months.

Ingredients of Sesame Gajak

Prepare 1/2 cup of sesame.

It’s 1/2 cup of jaggery.

It’s 4 tbsp of sp pure ghee.

You need 4 tbsp of sp water.

You need 8-10 of raisins.
Roast sesame seeds in a heavy pan, till they feel light and pinkish.
Melt jaggery over low heat, in a large heavy pan.
Add Ghee, cardamom, stir gently till smooth.
Pour into tray, allow to cool till warm.

Roast sesame in a heavy bottomed karahi till slightly brown or an aroma comes. Roast it on low flame. It takes 3-4 minutes. Keep aside and Let it cool..

Now grease a thali thoroughly and keep aside..

Grind jaggery in a mixer. It will turn out as a lump. Heat ghee in a pan. Add jaggery and add 2 tbsp water and keep stirring till jaggery dissolves completely. Keep stirring till it turn thick..

Now add ground sesame seeds and mix it very well. Switch off the flame..

Immediately transfer this mixture to the greased thali and spread it evenly with the help of back of a katori. Place raisins and press down lightly on the mixture with the help of spatula..

Take a knife and mark cuts horizontally and vertically when it is still warm. Now allow it to cool down..

Cool and store it in a air tight jar..
How to make til gajak: Take a pan and put it on medium heat.
Make thick syrup by adding jaggery and water.
Apply oil to a plate and spread the mixture into a thin sheet.
