Veg Cutlet. Veg cutlet recipe - Simple, easy and delicious vegetable cutlet that can be served for a Evening snack with a chutney or dip. A green chutney or a Schezwan sauce goes best with these. These cutlets can be baked, deep fried or shallow fried to suit one's diet and taste.

Veg cutlets are a perfect party or evening snack with a crispy outer and a soft mushy filling made of vegetables and masalas.

It comes in many shapes and sizes but the most popular one is a small flattened circle.

Drain the cutlets on paper towels.

You can cook Veg Cutlet using 15 ingredients and 10 steps. Here is how you achieve it.

Ingredients of Veg Cutlet

  1. You need 2 of medium size potatoes peeled and chopped.

  2. Prepare 1/2 cup of carrot finely chopped.

  3. Prepare 1/2 cup of beetroot finely chopped.

  4. It’s 1/2 of french beens finely chopped.

  5. You need 1/2 cup of onion finely chopped.

  6. You need 1/2 cup of green peas.

  7. You need 1/2 cup of thick poha.

  8. It’s 1 tsp of each ginger, garlic, green chilli paste.

  9. Prepare 1/2 tsp of garam masala powder.

  10. You need 1/2 tsp of amchur powder.

  11. It’s 2 tsp of oil.

  12. You need to taste of Salt.

  13. It’s of Breadcrumbs for rolling cutlet.

  14. It’s of Oil for deep fry.

  15. It’s 1/2 cup of plain flour (maida) dissolved in water for batter.

Serve hot with'Mint Coriander Chutney' or ketchup.

Healthy Alternative: Instead of deep frying, brown the cutlets in a wide skillet on low to medium heat, using a teaspoon of oil on both sides.

Vegetable Cutlet, a delectable combination of mashed potato and green vegetables, is a crisp outside and soft inside Indian potato snack.

Veg Cutlet step by step

  1. Heat 2 tsp of oil in a pan, add chopped onions & saute on a medium flame for 1 minute..

  2. Add all the vegetables & mix well..

  3. Cover & cook on a low flame till the vegetables are cooked, while stirring occasionally..

  4. Add 1 tsp of each ginger, garlic, chilli paste, salt, amchur powder, garam masala powder & mix well..

  5. Mash the mixture using a potato masher..

  6. Remove from the flame transfer the mixture to a plate & allow it to cool..

  7. Add thick poha into a mixture & mix well..

  8. Furthermore using a heart shape or round mould give a shape to cutlet..

  9. Dip each cutlet in the prepared batter & roll in the breadcrumbs..

  10. Heat the oil in a kadhai & deep fry each cutlet till it turns golden brown from both the sides..

Vegetable cutlets are best when dipped with Cilantro chutney, or tamarind chutney.

Vegetable cutlets also make great veggie burgers, adding cheese lettuce, tomatoes, and chutney.
