Amba khata. Odia style instant raw mango chutney, pickle Come summer and I smell our home kitchen with beautiful aroma from this simmering of amba khatta. Amba khatta, a sweet and sour raw mango chutney is a popular accompaniment to Odia meals.
Peel the raw mango n cut into big cubes.
Now heat oil, add pancha-phoran n whole red chili.
When mustard seeds in pancha-phoran start crackle, add curry leaves n raw mango cubes.

You need 1 bowl of Raw mango.

You need 8 -10 of Curry leaves.

It’s As needed of Dry chilli.

Prepare of Salt and Jaggery as per taste.

Prepare 2 tsp of Panchphutan (mustard , jerrA, saunf,methi , kalonji).

You need 2 tsp of Fried dry chilli and cumin powder -.

Prepare 2 tsp of Oil.

It’s Pinch of Hing.

It’s 1 tsp of Turmeric powder.
Add red chili powder n turmeric powder,mix well.
It's a tasty traditional recipe of Odisha.
In this recipe raw mango is cooked with mustard paste.
Jaggery /sugar is added for the sweetness.
Amba khata instructions

Cut the mangoes in to small pieces..

In a kadai take oil 2tsp, add the dry chilli 2pieces, add hing, curry leaves when all goes crackle add the mango pieces.

Add turmeric powder, salt to it fry all for some time, when the mango goes soft add water to it, when the water boils add Jaggery to it and cover the lid..

When the mangoes goes softer and Jaggery melted and cooked add the fryed chilli and jeera powder to it. Now its ready 😛.
It's prepared without onion, garlic and ginger.
One can have it at the time of fast too.
