You need 1 of mango(medium sized).

You need 1 1/2 cup of water.

You need To taste of salt.

You need 1/2 cup of sugar.

Prepare 2 tbsp of grated coconut.

You need 1 tbsp of oil.

It’s 1 tsp of panch phoron.

You need 2-3 of dry chillies.

It’s 3-4 of garlic cloves crushed.

It’s 1 sprig of curry leaves.

It’s 2 tsp of ginger garlic paste.

Prepare 1/2 tsp of turmeric powder.

You need 1 tsp of red chilli powder.

You need 1 pinch of asafoetida (hing).

You need 1 tsp of roasted cumin powder.
In summer, when you get the raw mangoes no family in Odisha miss cooking Amba Khatta.
The raw mangoes are cubed and cooked in Jaggery with ample flavoring from a pinch of five spices.
Amba is a popular Middle Eastern pickled mango condiment that's particularly common in Iraq, Saudi Arabia, and Israel.
It's similar to Indian mango chutney.

Take the mango and cut into cubes. Wash them well..

Take water in a pan. Add the mango cubes, pinch of turmeric powder and salt. Boil them for 7-8 minutes or till the mango becomes little soft..

Add sugar and cook for another 2 minutes. Next add red chilli powder, mix well and cook for a minute. Remove from the flame and keep aside..

Heat oil in another pan. Add panch phoron, dry chiilli, garlic and curry leaves. Saute for few seconds. Next add ginger garlic paste, turmeric powder, hing and saute for 2-3 minutes..

Now add the mango mix and cook on a low flame for 5-6 minutes till the consistency becomes thicker..

Add grated coconut, mix well and cook for a minute..

Finally add roasted cumin powder and turn off the flame..

Serve the delicious Amba Khatta' (Raw Mango Chutney) as a side dish with lunch/dinner..
