Amba Khata. Odia style instant raw mango chutney, pickle Come summer and I smell our home kitchen with beautiful aroma from this simmering of amba khatta. Amba khatta, a sweet and sour raw mango chutney is a popular accompaniment to Odia meals.

Peel the raw mango n cut into big cubes.

Now heat oil, add pancha-phoran n whole red chili.

When mustard seeds in pancha-phoran start crackle, add curry leaves n raw mango cubes.

Ingredients of Amba Khata

  1. Prepare 2 of Raw mango.

  2. You need to taste of jaggery.

  3. Prepare 1/2 tsp of salt.

  4. It’s 1/2 tsp of turmeric.

  5. You need to taste of chilli.

  6. You need 1/2 tsp of bhuna jeera powder.

  7. You need 1 tsp of kasuri methi.

Add red chili powder n turmeric powder,mix well.

It's a tasty traditional recipe of Odisha.

In this recipe raw mango is cooked with mustard paste.

Jaggery /sugar is added for the sweetness.

Amba Khata step by step

  1. Peel raw mangoes.Cut it in cubes..

  2. In a pressure cooker put oil heat it and put mustard seeds to splutter.

  3. Then add raw mango cubes,turmeric and chilli powder along with salt and jaggery.Give a quick stir.Add1 cup water so that mangoes are dipped…

  4. Pressure cook till two or three whistle and then let it cool while opening check consistency and add bhuna jeera powder and kasuri meethi for soothing smell.Kasuri methi is optional.Ready to serve.

It's prepared without onion, garlic and ginger.

One can have it at the time of fast too.
