Easiest Way to Royal Tasty Hiyayakko Surprise Delicious, fresh and tasty.
Hiyayakko Surprise. Hiyayakko (冷奴) is Japanese chilled tofu that is served as an appetizer or side dish. The smooth silky and creamy texture of the tofu helps to cool the body and makes a delightful respite on a sweltering day.. but to my surprise, this was the dish that made me really understand the real taste of good quality tofu. I thought silicon cups could be used for other purposes besides baking.
You could replace the shiso leaves with shredded nori seaweed.

I used to serve this dish back in the Red Ginger days.
You can cook Hiyayakko Surprise using 10 ingredients and 9 steps. Here is how you achieve it.
Ingredients of Hiyayakko Surprise

It’s 150 grams of Tofu.

You need 150 ml of Soy milk.

You need 1/4 tsp of Dashi stock.

It’s 5 grams of Gelatin.

It’s 1 tbsp of Water.

Prepare 2 of Okra.

You need 3 of Shrimp.

Prepare 50 ml of Mentsuyu (2x concentrate).

You need 1/2 tsp of Katakuriko.

It’s 1 of Shiso leaves.
On the menu I called it hiyayakko, which is a traditional Japanese dish of chilled soft tofu topped with grated ginger, green onions, and bonito flakes.
In truth my own dish is miles away from the slightly austere hiyayakko — it's vibrant and robust and fresh, turning something potentially quite boring into a zesty surprise.
It is a simple dish consisting of chilled tofu topped with green onions, bonito flakes, ginger, mustard, ponzu, soy sauce, etc.
Ingredients added depend upon one's liking.
Hiyayakko Surprise step by step

Boil the shrimp and okra in salted water, and cut into small pieces. Dissolve the gelatin in 1 tablespoon of water..

Put tofu in a bowl and whisk until smooth..

Combine the tofu, soy milk, and dashi stock granules in a small pot over low heat. Add the dissolved gelatin, mix well, then cool..

Pour the liquid to about 1/4 of the silicon cups. Chill in the fridge for 5-10 minutes to cool..

Place the shrimp and okra..

Pour the rest of the tofu mixture into the cups. Wrap with cling film, and chill in the fridge for about 1 hour until set..

Combine the mentsuyu and katakuriko well, and heat over low to thicken. Cool..

When firm, transfer to a plate. Pour the sauce over, and sprinkle with shiso leaves if you like..

I used silicon cups bought at the 100 yen store. Theyre easy to use as you can remove the tofu by flipping the cups. Alternatively, you could use pudding cups or small bowls..
Tofu is known as a good source of protein, calcium, and iron.
It also consists of essential amino acids. if you haven't tried it yet, you might be in for a delicious surprise. you can use this for other types of tofu dishes too like hiyayakko (japanese style cold tofu) although subtle - it makes a difference. if you haven't yet, try it out and see for yourself!
