Creamy Carrot Soup. Heat butter in a Dutch oven over medium heat; add carrots, potato, onion, celery, chicken broth, and ginger. In a Dutch oven, saute onion in butter until tender. Add the carrots, potato, broth and ginger.

Add potatoes and broth, then bring to a boil.

Reduce heat, and simmer until potatoes are tender.

In a blender, blend carrots and broth until smooth.
