Amba khata. Odia style instant raw mango chutney, pickle Come summer and I smell our home kitchen with beautiful aroma from this simmering of amba khatta. Amba khatta, a sweet and sour raw mango chutney is a popular accompaniment to Odia meals.

Peel the raw mango n cut into big cubes.

Now heat oil, add pancha-phoran n whole red chili.

When mustard seeds in pancha-phoran start crackle, add curry leaves n raw mango cubes.

You can cook Amba khata using 13 ingredients and 3 steps. Here is how you cook it.

Ingredients of Amba khata

  1. It’s 4 of big raw mango cut into cubes.

  2. You need 4 of green chillies.

  3. It’s 4 tbsp of Sugar.

  4. Prepare 200 grams of noren gud (jaggery).

  5. You need 1 tsp of panch phoron.

  6. You need 1/2 tsp of asafoetida (hing).

  7. You need 1 tsp of turmeric powder.

  8. You need 1 tbsp of mustard seeds paste.

  9. You need 2 tbsp of coriander leaves chopped.

  10. It’s 2 tbsp of oil.

  11. You need 1 1/2 cup of water.

  12. It’s to taste of Salt.

  13. It’s 8 of raisins.

Add red chili powder n turmeric powder,mix well.

It's a tasty traditional recipe of Odisha.

In this recipe raw mango is cooked with mustard paste.

Jaggery /sugar is added for the sweetness.

Amba khata step by step

  1. Heat oil in a kadhai add panch phoron and chilli, when you hear the crackling noise add hing, mango cubes, salt, raisins, turmeric powder mix it thoroughly cook for 5 minutes, then add gud, sugar mix it again cook for 5 minutes in slow flame..

  2. When sugar and gud dissolve completely add mustard paste along with water and again cook for 3 minutes, sprinkle some chopped coriander leaves..

  3. Cover the kadhai for 3 minutes then its ready to serve hot or cold. I like it this recipe a little sweet, so add sweetness as per your taste..

It's prepared without onion, garlic and ginger.

One can have it at the time of fast too.
