Eforiro soup. Efo Riro Recipe is a very popular Yoruba soup in Nigeria, it is one of my favorite Nigerian soups because of its health benefits. The name 'efo' means vegetables, hence it is a Yoruba rich vegetable soup. Efo Riro is a rich vegetable soup that is native to the Yorubas of Western Nigeria.

Efo riro is the soup for you , If you love a rich, tasty and flavorful soup. c'mon and excite your palate with this spicy soup.

Efo Riro soup recipe first appeared on this website a few years back and was a big favorite among our readers, who also poured in their happy feedbacks.

Even though the old recipe is good as it is, I have updated it a bit and I can tell you that this efo riro.

You can have Eforiro soup using 11 ingredients and 13 steps. Here is how you cook that.

Ingredients of Eforiro soup

  1. It’s of Spinach (efo) (alaiyahu).

  2. It’s leaves of Ugu.

  3. Prepare of Stock fish.

  4. You need of Beef.

  5. It’s of Kpomo.

  6. It’s of Red oil.

  7. It’s of Scotch bonnet (attarugu).

  8. Prepare of Garlic.

  9. You need of Onion.

  10. You need of Seasoning.

  11. It’s of Salt.

Efo Riro is a traditional Vegetable Soup of the Yoruba Tribe in Nigeria.

It is well known for its savory taste and richness.

It is actually the Yoruba version of the Efik's Edikang Ikong Soup , but with a big twist ☺.

Efo Riro is a native Yoruba vegetable soup cooked with Efo Shoko leaves or Efo Tete leaf that is called Green Amaranth, Efo is a delicious soup with rich nutritional values.

Eforiro soup step by step

  1. Cut spinach and ugu into tiny slices..

  2. Wash well with salt, drain and keep aside..

  3. Wash ugu with salt and keep aside.

  4. In another pot boil hot water and pure on ur washed spinach, drain and add cold water, drain again and squeeze to remove excess water..

  5. In a pot add beef, kpomo and stock fish..

  6. Add seasoning, salt, curry and thyme and allow to cook till tender..

  7. Grind together scotch bonnet, garlic n onion..

  8. Add oil in a pot, add onion wen saute add in ur scotch bonnet, garlic n onion paste. Add seasoning and stir till fried..

  9. Add in ur beef stock n meat.(Just d meat stock is ok dont add water so d soup won't be too watery).

  10. Allow to boil..

  11. Add in ur ugu, stir and allow to cook.

  12. Finally add in ur spinach stir and cover to simmer for 4-5 minutes.. Our eforiro is done😋😋.

  13. Enjoy with tuwon shinkafa, eba, fufu or any swallow of ur choice.

Its one of the most favorite Yoruba soup people love just like Edikang Ikong soup.
