  2. You need 2 of green chillies.

  3. You need 1 tsp of salt,.

  5. You need 1 tsp of urad dal,.

  6. It’s of asafoetida powder.

  7. Prepare 1 bunch of coriander leaves.

I have always made thuvayal with different vegetables and the method of preperation is always the same.

  1. First apply oil on the brinjal and toast it in the heat..

  2. Peel the black skin and mix it with salt..

  3. Then in the cooking pan add azafoetida, mustard, urad dal in the heated oil. Then add grated green chilies, fry it properly then add to brinjal mix. Add coriander leaves..

  4. Brinjal thuvayal is ready to taste..

There are different ways to make brinjal chutney.

Roast the brinjal in the flame and when the skin changes its color to black, remove the skin and keep it aside.

Keep the flame in low to medium while roasting.

Pour the oil in the pan and add the mustard seeds.
