Ridge gourd can be prepared in various ways, in the form of curries, as an addition to sambar, but I like it best as a thick creamy thogayal.

Ridge gourd is known as Beerakaya in Telugu, Peerkangai in tamil and Turai in Hindi.

This vegetable is commonly available in India and can be prepared in many ways.

Ingredients of Peerkangai chutney ll Ridge guard chutney

  1. You need 1 of Peerkangai ll Ridge guard.

  2. It’s 5 of Kathirikai ll Brinjal.

  3. It’s 5 of Tomato ll Thakkali.

  4. Prepare 1 nos of Onion ll vengayam.

  5. Prepare 5 of Green chillies.

  6. You need 1 of Potato.

  7. Prepare Few of Curry leaves & coriander leave.

  8. Prepare As per taste of Salt.

  9. It’s As required of Water.

  10. Prepare For of seasoning-.

  11. Prepare 2 tbsp of Coconut oil.

  12. Prepare 1 tbsp of Mustard seeds.

  13. Prepare 1 tbsp of urad dal.

  14. You need Few of Curry leaves.

  15. It’s 1 tsp of Asafeotida.

You can make dal, stir fry, gravy, kootu, even chutney with its skin (thole thogayal) etc.

Today we will learn how to make ridge gourd thogayal following our easy recipe.

Procedure: Make peel skin of Peerkangai (Ridge guard) cut potato and Tomato in to small cubical pieces.

Beerakaya pachadi recipe or ridge gourd chutney for idli, dosa,rice,chapathi.

Peerkangai chutney ll Ridge guard chutney instructions

  1. Finely chop onion, tomato, potato, ridge gourd, brinjal. Add all chopped ingredients into the pressure cooker..

  2. Add roughly chopped green chilli, curry leaves coriander leaves and add 2 tbsp rock salt..

  3. Add 100 ml or 1 glass water in to pressure cooker for boiling and pressure cook for 4 whistle or 15 mins until it thoroughly boiled..

  4. After 4 whistles and pressure release we smash that boiled ingredients using any smasher or our traditional Metthu. Smash well dont grind this in to mixer grinder. Add a little bit of water..

  5. Smash it well. For seasoning add 2 tbsp coconut in pan leave oil to heat. Add 1 tbsp mustard seeds and urad dal, curry leaves, asafeotida 1 tsp and pour this seasoning to our chutney and mix it well..

  6. Our ridge guard chutney it really nice for idly, Dosa, appam, and any millet dosa. Try this and enjoy.

For those who are not familiar with this vegetable, beerakaya is called as Ridgegourd in english, heerekai in kannada, Peerkangai in tamil and Turai in hindi.

This pachadi is also called as peerkangai chutney in tamil, heerekai chutney in kannada is one of the most commonly prepared side dish from South Indian cuisine.

A simple gravy which goes well with rice.

Though we call the gravy as chutney.
