Double Stuffed Potatoes. Sooooo I guess these can be done ahead of time which makes them even better!! Certainly not a low-fat recipe - especially after I added the cream cheese, but wonderful.. Even the pickiest of eaters loved these twice baked.

Make classic, stuffed, twice-baked potatoes for a vegetarian main course or a side dish for a steakhouse-style dinner.

One bite of these twice baked potatoes and you will want to make them all the time.

Bake for one hour, or until fully cooked.

Ingredients of Double Stuffed Potatoes

  1. Prepare of large baking potatoes (russet).

  2. It’s of sour cream.

  3. Prepare of chopped & cooked bacon.

  4. It’s of grated marble cheese.

  5. Prepare of chopped fresh parsley.

  6. Prepare of butter or margarine.

  7. Prepare of salt & pepper to taste.

Remove potatoes from oven and let cool slightly.

Cut potatoes in half and scoop out potato, being careful not to tear the skins, and place in a large bowl.

Add butter and salt to potatoes; mash until smooth.

Add sour cream; mash until combined.

Double Stuffed Potatoes step by step

  1. Bake potatoes in a 350 oven for 45 minutes..

  2. Remove potatoes, cool for 5 minutes, then cut in half lengthwise..

  3. Scoop out the insides of the potatoes (try not to tear the skin)..

  4. In a bowl mix the potatoes, butter, sourcream, bacon pieces, half the chopped parsley, and half the grated cheese..

  5. Mix until combined and season with salt & pepper..

  6. Scoop the filling back into your potatoe halves and top with remaining grated cheese and chopped parsley..

  7. Bake in a 350 oven for 35 minutes. & Enjoy..

The great thing about twice baked potatoes is, precise measurements really aren't necessary.

Basically, what you do is you bake some potatoes, scrape out the insides, then add a bunch of yummy stuff and mix it together.

Then you fill the scraped-out potato shells with the new potato mixture, top with cheese, and bake again, just to warm it up.
