Ingredients of Ambila vegetable Kadhi

  1. You need 3 cup of vegetables chopped (brinjal, radish, pumpkin, arbi, raw papaya, lauki.

  2. Prepare 4 cup of water.

  3. It’s 1 tsp of turmeric powder.

  4. Prepare 1 tsp of salt.

  5. You need 8 of garlic cloves crushed.

  6. Prepare 3 of green chilli slit to 2 lengthwise.

  8. It’s 8-10 of curry leaves.

  9. Prepare 1/2 tsp of poncha phutan.

  10. You need 1 pinch of hing/ asafoetida.

  11. Prepare 2 tsp of mustard oil.

  12. You need 1 of dried mango (ambula known in odisha).

  13. Prepare 2 tbsp of curd.

  14. You need 2 tbsp of lightly fried besan.

Ambila vegetable Kadhi instructions

  1. Boil the veggies and chopped tomatoes with salt, turmeric and water..

  2. Mix curd, besan, ambula and 1/3 cup water well and keep aside..

  3. In a kadai, heat oil. Add poncha phutan and let them crackle. Add crushed garlic and green chilli and sauté till rawness is gone..

  4. Then add hing and curry leaves and saute for half a minute..

  5. Slow down the flame and mix the curd mixture. Bring to boil and mix it boiled veggies and cook for 2 minutes.

Serve with steamed rice and enjoy. Thanks.
