Naija Buka Stew. Buka Stew is one of my most popular dishes for The Dooney's Kitchen Experience, here I am learning how it is made. So, i stayed and watched Alhaja Modinat finish the stew. Luckily, there was a little cloud cover to shade the burning sun, so i got some reprieve..

This stew is loaded with assorted meats and different types of pepper which gives it layers of awesome flavours.

Buka Stew is usually very thick, really red and well fried.

Turn the intestines inside out and clean very well else your buka stew will taste badly.

Ingredients of Naija Buka Stew

  1. It’s 1 of kilo of Brown Ponmo (rolled up cow skin).

  2. It’s of Small bowl of fresh Tomators.

  3. You need of Small bowl of fresh chilli pepper (same as sombo).

  4. It’s of Small bowl of Fresh pepper (ata rodo.

  5. Prepare of Small bowl of red bell peppers (tatasha).

  6. You need 1 of big onions.

  7. Prepare 2 tablespoon of curry powder.

  8. Prepare 2 of season cubes.

  9. Prepare of Salt.

  10. Prepare 1 cup of Vegetable oil.

  11. You need of Assorted spices to season the meats.

Directions for making Buka Stew (Mama Put Stew) Pour the tomato puree in a big enough pot, boil on the stove till all the water dries up.

Add the tomato paste, mix very well and set aside.

Buka stew is a popular Nigerian stew that is present in every Nigerian home.

It is simple, versatile, delicious and easy to make.

Naija Buka Stew instructions

  1. Wash all the Meats properly…. Season with garlic, onions, shallot,black pepper, cubes and cook without the meat releases its own juices/ water….

  2. Add water once its almost Dried…add in the already wash Ponmo and allow to cook till the Meats are tender.. Next drain the meat and strain the stock….

  3. Place all the tomatoes,peppers and oinions in a blender, blend till very smooth, pour content into a pot and boil without turning till the water dries out and you are left with a thick reddish tomatoes paste.

  4. Place a pot on fire, pour in the vegetable oil, low to heat up,. Add sliced oinions, stir, add chopped garlic stir quickly and lastly add the boiled tomatoes puree and stir properly… Allow to Fry up a bit,. Add the strained meat stock and stir…

  5. Once it boils, add done plain water and let it boil for about 5 mins..

  6. Stir, add in the Meats, crumbled stock cubes in, a little pit of curry powder, add salt if needed and stir up proper… Allow the Stew to cook till the water level drops and the oil starts to show on the top….

  7. Shake up the pot and remove from heat…You can add thyme if you so desire, but to get the real Buka Stew taste, I usually boil the meat with thyme and skip adding thyme to the Stew making process..

It is made with assorted meat, cooked in tomato base (Nigerian pepper mix) and palm oil.
