Echore Kosha (Green Jackfruit Curry). Pour this over the jackfruit curry and mix well. Echore Kosha (Green Jackfruit Curry - Bengali Style) This is a typical Bengali style curry, where I have added some green peas (which is purely optional) and omitted potatoes (for health reason). But you may add if preferred.
Small sizes are easier to handle.
Echorer Dalna or Kancha Kathaler Torkari is my summer favourite dish.
Kancha Kathal (raw jackfruit) is also called "gach patha" (tree goat) in Bengali as, if cooked to perfection, the taste can actually substitute mutton.

It’s of small raw / green jackfruit, cut into cubes.

Prepare of green peas (opt).

It’s of mustard oil.

Prepare of bay leaves.

Prepare of dry red chilies.

You need of cumin seeds.

You need of cinnamon stick.

Prepare of green cardamoms.

Prepare of cloves.

Prepare of onion, chopped.

Prepare of ginger-garlic paste.

It’s of tomato paste / puree of 1 tomato.

Prepare of salt.

You need of turmeric powder.

Prepare of coriander-cumin powder.

You need of garam masala powder.

It’s of red chilli powder.

You need of coriander leaves.

It’s of ghee.
One must try it to believe it.
Though, it can be cooked in vegetarian version as well, but, the mutton taste can be brought only if it is cooked in non vegetarian way.
Echore - Koraishutir Torkari (Raw Jackfruit - Green Peas Curry - Bengali Style) Green jackfruit is very much enjoyed in most of the Indian states.
It is known as Echorer Dalna among the Bengalis, Panasaputtu Kura in Andhra / Telangana and Kathal Do Pyaza in the Northern regions.
Echore Kosha (Green Jackfruit Curry) instructions

In a small bowl, mix together ginger-garlic paste, tomato paste and all the dry spices with some water and keep aside for 5 minutes..

Heat 1 tbsp. oil and saute the jackfruit till light brown..

Heat remaining oil & temper with bay leaves, red chilies, cinnamon, cardamom, cloves & cumin seeds. Saute for a few seconds..

Add the onion & saute till light brown..

Add the spice paste & stir fry till the oil separates..

Then add the fried jackfruit followed by the green peas & green chilies..

Add 1 cup water. Pressure cook for 4-5 whistles. When done, add ghee & mix well..

Garnish with coriander leaves & serve with either hot steamed rice, chapati, poori or paratha..
Raw Jackfruit is also known as 'Gach Patha' in Bengal, which literally means "tree goat".
Echor or raw jackfruit is compared to goat meat because its texture almost matches with the goat meat and the nutritional benefits are also the same.
Actually it is cooked with the same spices like goat meat and the curry also tastes like meat only.
In a food processor, blitz the garlic, ginger, onion and salt to a smooth paste.
Add water if you need to, but very little.
