It is believed that onions make the soup less viscous. this can be true if a lot of onion is added, however, if a little is added as I did in this recipe, your okro soup will.

Ingredients of Oil less Okro Soup by Ogechukwu Mbanugo

  1. You need 8 cups of chopped Okro.

  2. You need 4 of large chili pepper (Tatashe).

  3. You need 4 of fresh tomatoes.

  4. It’s 2 of yellow scotch bonnet peppers.

  5. It’s 2 of red scotch bonnet peppers (Atarodo).

  6. You need 1 of medium onion bulb.

  7. You need 2 of garlic cloves.

  8. It’s 1 tbsp of ground crayfish.

  9. Prepare 2 of seasoning cubes.

  10. Prepare 1/4 tbsp of ground pepper.

  11. Prepare 1 cup of shredded smoked fish.

  12. You need 1 cup of dry prawns (optional).

  13. Prepare 2 of medium titus fish.

  14. Prepare 1 cup of shrimp.

  15. It’s 3 cups of meat stock or water.

  16. You need 1 cup of shredded pumpkin (ugu leaves).

  17. It’s to taste of Salt.

In a large skillet on medium heat, add some palm oil.

Fry some onions till it just begins to turn brown, then add the chopped okra.

  1. Start by blending red bell chili pepper (Tatashe), tomatoes, scotch bonnet peppers, garlic cloves and onion bulb until a smooth puree is formed. You need about 2 cups of this puree.

  2. Note: My tip to making the blending process easier without adding so much water is to chop the peppers and tomatoes and onion into very tiny bits. That way the blades of the blender work their magic faster.

  3. Place a medium pot on medium heat, transfer blended puree and 3 cups of meat stock or water. Bring to a rolling boil.

  4. Next, add shredded stock fish, dry prawns, crayfish powder, ground dry pepper, seasoning cubes and salt to taste. Leave to cook for 5-7 minutes.

  5. Afterwards, add titus fish and shrimp and continue cooking for another 5 minutes.

  6. The chopped Okro which is the star of the soup come in next. Stir thoroughly to combine being careful not to break up the fish.

  7. Allow to simmer slightly for another 2 minutes then add the pumpkin leaves (ugu). Stir to combine and take off heat immediately.

  8. Enjoy your oil less Okro soup with any side dish of your choice. For me I took only the soup and the taste is beyond this world.
