To re enact the afternoon buka trips I made years ago, I pack a bowl of plain white rice and a side of fried plantain and boiled beans, topped generously with buka stew and meats for lunch during the week.

Now imagine putting those two greats in one dish.

Your taste buds will be dancing and singing to the heavens.

I came up with this dish quite by accident.

  2. You need of Tatase.

  3. Prepare of Pepper.

  4. You need of Onions.

  5. Prepare of Maggi.

  6. You need of Vegetable oil.

  7. It’s of Salt.

  8. You need of Different parts of intestines.

I had leftover Alhaja Modinat's Buka stew (recipe HERE) in the pot, and that day i happened to be cooking jollof rice for an order in a separate pot.

Buka stew and rice step by step

  1. Blend the tomato, pepper and onions with tatase.

  2. Boil it properly.

  3. Season the intestines and boil until soft.

  4. Add the intestine with the vegetable oil to the boiled tomato.

  5. Stir the pot and let it boil.

  6. Add maggi and salt and cook for 10mins more.

Take the buka stew off from heat, serve it over boiled rice and enjoy.

Turn the intestines inside out and clean very well else your buka stew will taste badly.

Directions for making Buka Stew (Mama Put Stew) Pour the tomato puree in a big enough pot, boil on the stove till all the water dries up.

Add the tomato paste, mix very well and set aside.
