Koottu Curry. Kootu curry recipe with step by step photos - kootu curry also known as koottukari or kootu kari is a thick curry based dish made with a few veggies and legumes. The veggies that are added are yam, ash gourd, carrots, snake gourd, pumpkin or plantains. The legumes added are black chickpeas (kala chana) or bengal gram (chana dal).

Now heat a tsp of oil, add mustard seeds, when it splutters, add red chilly and curry leaves.

Pour this seasoning over the koottu curry.

Fry coconut till it becomes golden brown and add to the kootu curry.

Ingredients of Koottu Curry

  1. Prepare 1/2 cup of Chena (Yam) chopped.

  2. You need 1/2 cup of Kaya (Raw Banana) chopped.

  3. You need 1/2 of Carrot chopped.

  4. Prepare 1/2 cup of Kadala (Black chana dal) boiled.

  5. You need 1 of small Kumbalanga (Ash gourd) piece chopped.

  6. It’s 3/4 tsp of Turmeric powder.

  7. It’s 2 tsps of Chilli powder.

  8. Prepare of Salt per taste.

  9. Prepare 1/2 cup of Coconut grated.

  10. Prepare 1 tsp of Cumin seeds.

  11. You need 1/2 cup of coconut Shredded.

  12. You need of Ghee.

  13. Prepare of Oil.

  14. You need 1 tsp of Mustard seeds.

  15. You need 1 tsp of Urad dal (Uzhunu parippu).

  16. It’s 3 sprigs of Curry leaves.

  17. Prepare 3 - 4 of Jaggery cubes.

Kootu curry is now ready to be served; Serving Suggestion.

Serve the kootu curry with rice.

This is part of the traditional Sadya.

Kootu curry recipe is made with black chickpea/kala channa and yam and cooked along with coconut.

Koottu Curry instructions

  1. Boil all the vegetables listed above in a vessel..

  2. Once the vegetables are boiled, transfer them into a pan and add the spices like turmeric chilli powder and saute it..

  3. Add the jaggery cubes and cook it on low flame until it melts down completely..

  4. Meanwhile prepare the coconut paste adding a teaspoon full of cumin seeds. Once the jaggery gets melted add the paste to it and mix well. Adjust the salt to taste..

  5. Now temper the curry by spluttering the mustard seeds, urad dal, curry leaves and dry red chilli in oil. To this add the shredded coconut and saute it until it becomes slightly brown and finally add some ghee..

  6. Serve it with curry leaves and ghee..

It is a dry dish served as accompaniment in sadhya.

Kootu curry is a dry side dish and the fried coconut tempering gives it its unique flavors.

The chickpeas is soaked overnight and then cooked in a pressure cooker.

The plantain and yam pieces can be added together and cooked separately till done.
