Puliyogare recipe or Puliyodharai is a very SIMPLE & TANGY rice recipe. "Puli" is a tamil word which stands for Tamarind.

You can have Puliyogare (Pulihora) using 16 ingredients and 6 steps. Here is how you achieve it.

Ingredients of Puliyogare (Pulihora)

  1. You need 3 cups of cooked and cooled raw rice.

  2. It’s 2 tbsp of peanuts.

  3. Prepare 2 tsp of chana dal.

  4. You need 2 tsp of urad dal.

  5. It’s 1 tsp of mustard seeds.

  6. It’s 2-3 of dry red chillies (broken).

  7. It’s 10-15 of curry leaves.

  8. You need 1 of onion chopped.

  9. Prepare 1 of tomato chopped.

  10. You need 1/2 tsp of turmeric powder.

  11. Prepare 1/2 tsp of chilli powder.

  12. It’s 1/2 tsp of garam masala powder.

  13. It’s 1 pinch of asafoetida (hing).

  14. It’s To taste of salt.

  15. Prepare 2 tsp of oil.

  16. Prepare 2 tsp of chopped coriander leaves.

The reason this recipe is called as Puliyogare or Puliyodharai is because it has a dominant flavour of tamarind and has a tangy/sour taste.

Puliyogare (Pulihora) step by step

  1. Heat oil in a pan and add mustard seeds. When the mustard seeds start to crackle, add chana dal, urad dal and peanuts. Fry till they are roasted and golden brown on a low flame..

  2. Add dry red chilli, curry leaves and fry for few seconds..

  3. Add hing, then onion and tomato and fry for a while..

  4. Next add turmeric powder, chilli powder, garam masala powder and salt. Saute for few seconds till the mixture thickens..

  5. Now add the cooked and cooled rice to the tempering. Mix to coat the rice with spices well. Fry the rice on low medium flame for 2-3 minutes. Then add coriander leaves, cover it and turn off the flame..

  6. Puliyogare is ready. Serve hot as is or with pickles/ fresh homemade yogurt..
