  1. You need 1/4 of yam tuber.

  2. It’s 2 of green bell pepper.

Yam Picatta by Ogechukwu Mbanugo step by step

  1. Cut yam in large cubes and wash thoroughly, boil with salt and sugar solution. When yam is 85% cooked drain out water, spread on a tray, wait till it is totally cooled off then coat with the flour.

  2. Dice green, red and yellow bell peppers.

  3. In a bowl, mix egg, thyme, curry, seasoning cube, diced green, red and yellow bell peppers, chilli pepper and salt to taste.

  4. Heat vegetable oil in a deep fryer or a trying pan.

  5. Deep yam into egg mixture and put a reasonable amount of diced green, red and yellow bell peppers on top of the yam.

  6. Put as many yam as the deep fryer can take.

  7. Note: Dont just throw the yam into the heated oil, ensure it is standing upright so that the bell peppers don't fall off the top the yam.

  8. When yam is golden brown, our on a platter lined with kitchen paper to drain excessoil.
