I am not quite sure why we call these American Enchiladas.

I am posting this because I am very interested to see other changes that can be made to this, sometimes I make changes such as adding cajun seasoning to the chicken.

This is my husbands favorite recipe.

You can cook American Enchiladas using 11 ingredients and 5 steps. Here is how you cook that.

Ingredients of American Enchiladas

  1. You need 1 box of Jiffy corn bread.

  2. It’s 1 of egg.

  3. It’s 1/3 cup of milk.

  4. Prepare 3 can of tomato sauce.

  5. You need 1 1/2 lb of ground meat.

  6. It’s 1 packages of shredded Mexican cheese.

  7. It’s 1 head of Romain lettuce, chopped.

  8. You need 1 of tomato, sliced.

  9. Prepare 1 of onion, chopped.

  10. You need 1 can of sliced black olives.

  11. Prepare 1 can of sliced mushrooms.

Ground beef and onion are wrapped in flour tortillas, topped with Cheddar cheese and black olives, then baked.

This is also great with leftover chicken, shredded beef or turkey.

Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato.

My mother in law is from Mexico and taught me to make this delicious dish!

American Enchiladas instructions

  1. With egg and milk, prepare and bake corn bread according to instructions on the box.

  2. While corn bread is baking, brown ground meat until fully cooked.

  3. Heat tomato sauce, in another pan, until hot.

  4. Once lettuce, tomato, onion, black olives, and mushrooms are all sliced, arrange vegetables on a serving platter.

  5. To serve, pile food as follows: piece of corn bread, ground meat, vegetables, drizzled tomato sauce, and shredded cheese as desired. Enjoy!.

Serve with authentic refried beans, it has a taste different from the norm–so good!
