Dim Kosha. Dim Kosha or Egg Kosha is a recipe from Bengal. It is a spicy egg curry where hard-boiled eggs are cooked in flavourful onion and tomato based gravy. Eggs are always the easy answer for empty pantry and busy day outs.
These are braised with spices on medium heat along with potatoes for a spicy, tangy gravy that has a gravy of thick consistency.

Dim Kosha step by step

Boil oil in pan and fry eggs in the oil. Then set them aside and fry cinnamon sticks in the same oil. Put potato cubes in the oil and fry it..

In the meantime mix the tomato paste, onion paste,curd and coriander powder with salt in a bowl. Add the mixture in the pan. Saute them well. Add eggs as well..

Now add water as much needed to thicken up the gravy..
It is slightly different from Dim er Dalna or Everyday Egg Curry.
Dim er Kosha is spicier, tastier and thicker than regular Dimer Jhol.
While jhol is more watery kosha is mainly oil based.
