Buka stew is also known as the restaurant's stew (In Nigerian, Buka or mama put means restaurant).

Buka stew step by step

  1. In a separate pot bleach some of the Palm oil till it blackens and set aside.

  2. In another pot, heat some palm oil with some chopped onions.

  3. Add the blended mixture of peppers and tomatoes. Add a considerable amount of water and beef stock to the pot to make the watery.

  4. Cook the stew till the quantity reduce. This will take a long time to achieve. You also need to cook this with the pot open. Dont cover the pot.

  5. Check back in 30minute intervals depending on how powerful your cooker is and when you start to notice changes in the consistency of the stew, the colour, the aroma and taste or when you noticed a ring of palm oil around the pot with the pepper bubbling in the middle, then your stew is almost done..

  6. Add the bleached palm oil, salt and seasoning cubes.

  7. Add the assorted meat and fry meat. And leave on fire till the meat are tender. Take off fire and serve with food of your choice.

Buka stew is different from the regular stew prepared.

It has a distinct taste and delicious smell that would attract you from afar.

It is prepared with soft peppers, not spoil but soft, also the palm oil is bleach to prepare this stew..
