Unripe plantain and Akidi beans porridge. Peel unripe plantain wash and cut into shape put in a clean pot. Technically my plantain isn't exactly unripe, I did buy some unripe plantain. The plantain is still very firm which makes it ideal for this recipe.
I am using fresh coconut milk this recipe, but you can use whatever milk that suits you.

You need 5 of fingers unripe plantain.

It’s 7 cups of Akidi beans.
