Mushrooms Galore! Easy Mushroom Soup with Mochi. This is one of the quick soups that I often serve for my family. This originally didn't have any mochi in it, but now it doesn't taste right without it! There are many different kinds of mushrooms available.

I also like to adapt this recipe to that of a favorite restaurant's mushroom curry soup.

  1. Prepare 1 of pack Shimeji mushrooms.

  2. It’s 3 of Shiitake mushrooms.

  3. It’s 1 of pack each of different kinds Maitake mushrooms.

  5. It’s 1 dash of Yuzu peel.

  6. You need 3 of Mochi (small).

  7. Prepare 1 tbsp of Sesame oil.

  10. It’s 1 dash of Salt.

  11. Prepare 2 tsp of Usukuchi soy sauce.

Whisk in flour and cook, whisking after a few minutes.

Stir in mushroom mixture and remaining stock.

Sprinkle over the flour and stir to combine.

Toast the ciabatta on a hot griddle pan, then top with most of the reserved mushrooms and drizzle lightly with extra virgin olive oil.

  1. Break shimeji and maitake mushrooms by hand into small clusters. Cut fresh shiitake into thickish slices..
