Mike's Springtime Pasta Salad. Great recipe for Mike's Springtime Pasta Salad. Our neighborhood held our annual, "Picinic In February," this weekend. I was charged with making a chilled pasta salad that represented springtime.

Truth be told, I didn't read the entire recipe before I made it, so I made it for.

  4. Prepare of 2.25 lb Vegetable Melody [your choice - see photo].

  5. Prepare of 4 oz Feta Cheese.

  6. Prepare of Shredded Parmesan Cheese.

  7. It’s of Black Olives [drained-halved].

  8. It’s of Artichokes [in water-drained-chopped].

  9. Prepare of Tomatoes [chopped].

  10. Prepare of Each: Granulated Garlic - Fresh Ground Black Pepper - Sea Salt - Red Pepper Flakes.

  12. It’s of Purple Onions.

  13. It’s of Green Onions.

  14. It’s of White Onions.

  15. Prepare of Celery [with leaves].

  16. You need of Sun Dried Tomatoes.

I have had most items on the menu and rarely been let down.

Quick tip: this cold pasta salad tastes best when it had time to chill.

So make sure to chill your salad!

Mike's Springtime Pasta Salad step by step

  1. Primary items needed..

  2. Boil 6" pasta water. Add a splash of oil and 1 tablespoon salt. Add pasta. Bring water back to a boil and boil pasta for 10 minutes with a tight fitting lid. Or, as per manufactures directions..

  3. Drain pasta well and immediately place it in a large bowl. Add 1 bottle of Zesty Italian Dressing, [use your preference] mix and place a tight fitting lid on it. This step will ensure the Italian oils and seasonings seep deep into your pasta..

  4. ° Put your vegetables and cheeses in another large bowl making sure everything is bite size. ° Look around in your pantry or fridges crisper for any additional vegetables you may want to use in your salad. I found purple, white and green onions, celery, sun dried tomatoes, fresh basil and parsley and employed them all..

  5. After your pasta has fully steamed and cooled - add your vegetable and cheese mixture and gently fold in to your wet pasta bowl. Add your additional bottle of Zesty Italian - as needed. I usually use about 1 1/2 bottles total..

  6. Chill in the fridge for a few hours for best results. This dish is even better the following day..
