Vegan Orange and Chocolate cake. You'll never know it was vegan - just wait until you slice into it! This week, I'm venturing into new territory again. I did start this blog as a journal to challenge myself and bake new recipes.

  1. You need 3/4 cup of All Purpose flour.

  2. You need 3/4 cup of Whole Wheat Pastry flour.

  3. Prepare 1and1/2cup of Cane sugar.

  4. You need 1 tsp of Baking powder.

  5. Prepare 1 tsp of Baking soda.

  6. You need 1/2 cup of Cocoa powder(Dutch).

  7. Prepare 1/16 tsp of Salt.

  8. Prepare 1/2 cup of Almond milk.

  9. Prepare 1 tbsp of Apple cider vinegar.

  10. It’s 3/4 cup of Any neutral flavored.

  11. You need as needed of oil.

  12. It’s 2 of Oranges with skin and pulp (boiled whole for 45mins).

Combine the dry ingredients in a bowl (chickpea flour, oat flour, cocoa powder, sugar, baking soda and baking powder).

Spoon the plain cake batter into one side of the tin and the chocolate batter into the other side of the tin, so the two are separated by the foil-covered strip.

The cakes are ready when you push a cocktail stick into the middle and it comes out clean.

Using teff flour to make this vegan chocolate orange cake.

Vegan Orange and Chocolate cake instructions

  1. Cook whole oranges in boiling water for 45mins, remove pips.

  2. Cut the cooked whole oranges, put into a blender to give smooth paste. Remove into a bowl, it cool down.

  3. Preheat oven to 180degreesC.

  4. Prepare 9inch round cake tin with parchment paper at base.

  5. Coat remaining inner surface with bit of oil.

  6. Dry mix- Whisk, measure and sift dry ingredients into bowl of standing mixer.

  7. Wet mix- Add the vinegar to the almond milk, let it clabber.

  8. Add oil to almond milk and whisk.

  9. Add wet mix to the dry mix at medium speed.

  10. Add the orange pulp mix to the batter.

  11. Pour into prepared cake tin.

    1. Bake on centre shelf for 45 mins or till the wooden pick in the centre comes out clean and cake has separated from sides of tin.
  12. Remove from oven and let it rest in cake tin for 10 mins.

  13. Remove from cake tin onto cooling rack.

  14. Serve with some vegan ice cream or just as is.

I feel that this vegan chocolate orange cake lives up to it's reputation of goodness.

It's made with gluten free teff flour, a superfood, one that originates from Ethiopia.

Teff is one of the smallest grains in the world but don't let its miniature size fool you.

Add the vegan chocolate chips and remove from heat, cover the pot, and swirl it around.
