Growing up kousa bil laban was what I used to consider comfort food; I loved it (anything with a yogurt sauce really).

You need 1 kg of Lebanese zucchini (choose the small or medium ones).

Prepare 1/2 kg of mince beef.

Prepare 1 cup of medium grain rice.

Prepare 1 tsp of salt.

It’s 3 cups of Greek yoghurt.

You need 1 tsp of mint flake.

It’s 1 tsp of oregano flake.

Prepare 3 of garlic cloves (finely chopped).

You need 3 cups of water.
This classic Lebanese dish might seem complicated, but once you master a few tricks (stuffing the zucchini and cooking the yogurt), it is a dish you will make over and over again.
Arrange zucchini in layers in a large pot, sprinkling each layer lightly with sea salt.
Now stuff the zucchini with the mixture, do not stuff till the top as rice will cook and expand.
Meanwhile make the yogurt sauce and drop the partially cooked zucchini in the yogurt sauce and continue cooking until completely done.

Using the corer knife, core the zucchini core to make it ready to be stuffed. Put aside..

Preheat pan, cook mince beef without oil until well cooked, put aside..

Wash medium grain rice in a bowl, add cooked mince beef salt, and peper. mix well..

Stuff rice and mince beef into zucchinis, put aside..

Prepare large cooking pot, put yoghurt and water, mix them well. Put the pot on the medium heat, keep stiring the yoghurt until it boils properly..

Add chopped garlic, stuffed Lebanese zucchinis, and salt, lower the heat, cover the pot. Wait until the zucchinis and rice inside them cook really well..

When they all cooked and soft, sprinkle mint flake and oregano, mix occasionally..

Koosa (or kousa, cousa, coosa) is a light green, smaller-sized Lebanese summer squash, also known as tatume here in Michigan at our Meijer grocery store.
If you can't find koosa, use zucchini or yellow squash, both delicious.
Just be sure to cut the neck low enough to create an opening large enough to insert corer.
Meanwhile, put the yogurt in another pan over medium heat and add the butter, garlic, corn flour, mint, and allspice.
Keep stirring until the yogurt sauce boils then reduce the heat and stir in the stuffed zucchinis.
