Easiest Way to Quick Appetizing Kothu chapathi Delicious, fresh and tasty.

Kothu chapathi. I always have leftover chapati after mealtime and it becomes dry over time. I do a stir-fry, chapati upma or kothu with leftover chapati. Its a wonderful way to give life to dry chapatis.

Veg kothu chapati/ Kothu chapati is a delicious combination of minced chapati and veg kurma tossed with some onions, tomatoes and masala served usually with onion raita as dinner or evening snacks or mini tiffin.

This recipe is a copycat recipe of the traditional veg kothu parotta that is popular in South India where parotta is used instead of chapati and comes with variations like veg kothu.

Now to make the kothu chapati, place a kadai on flame and pour oil into it.

You can have Kothu chapathi using 15 ingredients and 5 steps. Here is how you cook it.

Ingredients of Kothu chapathi

  1. Prepare 4 of Chapati, cut into strips.

  2. Prepare 1 cup of Mutton or chicken, cooked and shredded.

  3. It’s 2 of Eggs scrambled.

  4. It’s 2 of Onion sliced.

  5. It’s 1 of Tomato chopped.

  6. Prepare 1 tsp of Ginger garlic paste.

  7. Prepare 1 tsp of Chilli powder.

  8. It’s Pinch of Turmeric powder.

  9. You need 1/2 tsp of Garam masala powder.

  10. It’s As per taste of Salt.

  11. It’s As required of Coconut oil /refined oil.

  12. Prepare 1 tsp of Pepper powder.

  13. Prepare 1 tsp of Fennel powder.

  14. Prepare Few of Coriander leaves.

  15. You need Few of Mint leaves.

After it heats up add fennel seeds, cinnamon stick, curry leaves, chopped green chillies, onions and sauté on low flame until onion seems half cooked.

Veg kothu chapati great alternative to veg kothu porotta and also a great way to use your leftover chapati.

Kothu chapathi step by step

  1. Cook chicken or mutton in a pressure cooker adding turmeric, salt, pepper powder and when cooked shred them into small pieces..

  2. Heat oil in a pan saute onions till golden brown. Add tomatoes, cook till it turns mushy now add ginger garlic paste and cook till raw smell disappears, next add some mint leaves and saute till you get a nice lovely aroma..

  3. Tip in chilli powder, turmeric powder, pepper powder and saute. Now add shredded chicken or mutton. To this add 1/2 cup water and close the lid for 2 mins on low flame..

  4. Open the lid and tip 1/2tsp garam masala powder and give it a nice stir..

  5. Finally add in chapathi strips, eggs to the chicken mixture along with a big pinch of fennel powder, few coriander leaves and mint leaves then mix thoroughly and close the lid for 1min and turn off the flame and serve hot..
