Basanti misti pulao. Basanti Pulao or Holud Pulao is not only a family favorite but a dish mandatorily cooked on the day of Jagadhatri Pujo at my ancestral house in North Calcutta. Basonti Pulao, in general, is a famous Bengali rice delicacy. Basanti stands for bright yellow color and this pulao is signified by the bright yellow color and the use of Gobindobhog Rice.
Basanti Pulao is a pure Bengali delicacy and one of the most famous pilau rice recipe in East India and Bangladesh.
It is a fragrant sweet rice dish which is also known as Mishti Pulao.
It is the combination of rice with some whole spices, ground spice, ginger paste and dry fruits and its prepared in Ghee (Clarified Butter).

Wash rice and spread it in a plate to dry it up..

When its dry add turmeric, grated ginger and 1tbsp of ghee. Mix it nicely and keep it for another 10 minutes..

Take a wok add ghee when hot add the rice. Fry it for few minutes..

Take another flat bottomed pan boil 4 cups of water. Add rice and sugar and mix..

Cook till rice is done..
I simply love it but as it is kinda rich, it's good for special occasions and celebrations only.
In Bengal this particular Polao is very popular in any special occation like marraige ceremony, rice ceremony etc even for the family gathering. "Misti/Mitha" stands for sweet in Bengali & "Holud/Basanti" stands for yellow in color & most importantly this will pronounce "Polao" not Pulao.
