Porridge beans and plantain. Nigerian Beans and plantain porridge is a meal made up of ripe plantains and beans. This is tasty dish and has become popular over the years , as most parents have discovered it as a way of getting their kids to eat beans. The addition of the ripe plantains, gives the meal , that sweet taste that kids love so much.

Porridge beans and plantain instructions

Wash beans and put in the pot to cook for an hour.

Parboil by removing water and put back in the pot.

Add onions and water and leave to get more soft.

Add fresh pepper, palm oil and seasoning. Cover so the water can get dry,break the beans with a wooden spatula and allow to simmer. Your dish is ready..

Slice plantain and deep fry in hot oil.
When the beans porridge is soft, add the onions, crayfish (if using it), pepper and seasoning.
Note: To get the most out of beans, it is best to cook it with one of the following: sweet yam, ripe/unripe plantain, sweet potatoes or baby corn.
