Ingredients of Udupi sambar

  1. Prepare For of sambar masala-.

  2. Prepare 10 of Kashmiri chillies.

  3. It’s 2 tbsp of coriander seeds.

  4. You need 2 tsp of Urad dhal.

  5. Prepare 1/2 tsp of fenugreek seeds.

  6. You need 1 tsp of cumin seeds.

  7. You need 6 of pepper corns.

  8. Prepare 1 cup of Scraped coconut.

  10. Prepare 1 of Tamarind Gooseberry size (soak in warm water).

  11. You need 1 cup of Thoor dhal.

This sambar goes well with rice, dosa and also for other South Indian Breakfast.

This is the recipe served in the famed Udipi restaurants (the exponents of Mangalorean cuisine worldwide) with dosas and idlis.

Udupi sambar step by step

  1. Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep..

  2. Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste.

  3. In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice..

  4. Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour.

Jaggery is a very important ingredient in Udupi Sambar.

The sweet and spicy and sour and a lot of flavours make for the delicious taste of the sambar.

Add in the ground sambar masala paste.

Add half a cup of water to clean the mixie jar and add the water back to the pan.
