  5. Prepare 150 ml of Tamarind juice.

  6. You need 1 Teaspoon of Gingelly Oil.

Thandu keerai (red or green amaranth leaves with tender stems) is a mature form of the amaranth (mulaikeerai).

I use up the stems in my cooking though many people discard it.

If the stems are a little tough I use a paring knife and string the outer layer.

  1. Clean the Keerai well and cut it finely..

  2. Take a Kadai, pour little oil, then put the Methi, crushed garlic and crushed red chilles.

  3. Saute for a minute, then add the Keerai with salt,once it cooked add the tamarind juice and let it boil for 5 mins.

  4. Nice aroma will come,then you can switch off the stove.

  5. Now the Keerai Saaru is ready to eat with steamed rice.

  6. Note: This Keerai Saaru goes nice with Coconut and roasted bengal gram chutney..

  7. You can use both the green and the red Keerai for this recipe.

Separate the leaves from the stems, and chop the stems together.
