Ndengu fried rice #ndenguchallenge. This is also a great way to use left over rice or Ndengu. It is an easy to cook and convenient well-balanced meal for the whole family. Depending on where you come from, the variations of these meals are numerous.

Ingredients of Ndengu fried rice #ndenguchallenge

  1. You need 2 cups of previously cooked and cooled plain rice.

  2. It’s 3 of small carrots, grated.

  3. It’s of Corriander, 1 bunch chopped.

  4. You need 2 of medium onions, chopped.

  5. You need of Tumeric powder, 2 tea spoons.

  6. You need of Garlic, 4 cloves crushed.

  7. You need 1 tablespoon of Soy sauce,.

  9. You need of I tea spoon, black pepper.

  10. It’s 1 of beef cube.

  11. You need 2 of teaspoons, curry powder.

  13. It’s 1.5 cups of pre-boiled ndengu.

  14. Prepare 3 tablespoons of cooking oil.

After all the festivities where we indulged in lots of meat, a break with healthy legumes.

Rich in protein, can be enjoyed with boiled white rice or chapati.

You can get a head start by making the rice one day ahead of time.

Ndengu fried rice #ndenguchallenge step by step

  1. In a heavy bottom sufuria, heat your oil and add your chopped onion.

  2. Cook the onions until they soften, add the garlic and ginger.

  3. When the onions start to brown, add your grated carrots and fry them until they soften.

  4. Add your dry spices and soy sauce.

  5. Add your Ndengu and simmer for about 3 minutes.

  6. Stir thoroughly and add about half a cup of water to the ndengu.

  7. Add your pre cooked rice, let it cover the Ndengu completely. Do not mix it in at this stage. Cover and reduce the heat to the minimum. Use a well fitting lid that will enable the rice to steam.

  8. After about 4-5 minutes, using a fork mix the rice and Ndengu thoroughly.

  9. Serve with a side salad (optional).

  10. Enjoy.

If you fry freshly cooked rice you end up with a mess.
