I have had badam halwa from krishna sweets in chennai.

Badam Halwa step by step

  1. Soak badam in water for 30 minutes. peel the skin of badam and blend to smooth paste. soak few threads of saffron in 2 tbsp of warm milk for 10 minutes.

  2. Transfer the badam paste into the large kadai and add in a tbsp of ghee and saute for a minute on low to medium flame. Add in ¼ cup sugar and saute continuously..

  3. Mixture will get watery after sugar is added. Add saffron milk and keep stirring..

  4. Mixture will start bubbling, keep stirring. Now add half tbsp of ghee and keep stirring, it will start thickening..

  5. Now add chopped cashews and rest of ghee. stir till the mixture separates the pan and ghee oozes out from sides. furthermore, add in ¼ tsp cardamom powder and mix well.

First bite and their halwa was too sweet for my taste buds, but I wanted to get the same texture as their halwa.

Badam Halwa will thicken when it cools.

Remove the pan to the kitchen counter and start mixing the Badam Halwa with a spatula.

Use a folding motion to mix.
