Vegetable Jalfrezi is best enjoyed with naan or rice.

Tofu and Vegetable Jalfrezi can be eaten with naan, rice, quinoa, or even on its own.

Ingredients of Achari Vegetable Jalfrezi with Tofu

  1. It’s of Veggies.

  2. Prepare 1 large of onion, roughly chopped.

  3. It’s 2 large of carrots, julienned.

  4. Prepare 1 bunch of French green beans, slit diagonally into small pieces.

  5. You need 3 medium of bell peppers, roughly chopped.

  6. Prepare 1 medium of indian squash, julienned.

  7. You need 1 piece of ginger, julienned.

  8. It’s 3 clove of garlic, minced.

  9. You need 1 each of green chilly, thinly sliced.

  10. Prepare 2 piece of tofu, cut into small pieces (can be substituted with paneer).

  11. You need 1 can of baby corn, cut into bite-sized pieces.

  12. Prepare of Spices and Flavors.

  13. You need 2 1/2 tbsp of chilly garlic sauce.

  14. It’s 2 tbsp of tomato ketchup.

  15. Prepare 1 1/2 tbsp of chilly paste, or to taste.

  16. You need 1 tbsp of coriander powder.

  17. It’s 1 tsp of fennel powder (saunf).

  18. It’s 1 1/2 tsp of indian pickles (achar).

  19. Prepare 1 tsp of cumin seeds.

  20. It’s of Garnish.

  21. Prepare 1 bunch of coriander leaves.

  22. Prepare 1 bunch of cabbage, finely shredded.

  23. You need 1 tsp of paneer or tofu, shredded.

  24. Prepare 1 dash of mint leaves, sliced thinly.

  25. You need 1 tbsp of oil.

  26. You need 1/4 cup of water.

If you don't want to use tofu, you can use tempeh, seitan, or your favorite plant-based protein.

For the tofu, I prepared it using my air fryer recipe.

This recipe is not an authentic recipe, it is my version of jalfrezi in Achari flavors.

It is a delightfully flavorful curry with tender juicy chunks of chicken with stir-fried mushroom and onions and tomatoes.

Achari Vegetable Jalfrezi with Tofu step by step

  1. In a wide pan, take a tablespoon of oil/fat.

  2. On high heat, add the cumin into the oil.

  3. Once the cumin browns a bit, add the veggies in the following order, giving each vegetable a 30 second headstart over the next: onions, ginger, garlic, carrots, beans, baby corn, squash, bell peppers, green chillies. Saute until veggies are tender yet crunchy..

  4. Add the protein ( tofu or paneer). Saute for a minute. Add all the dry spices and roast for about a minute. (fennel and coriander powder).

  5. Add the chilly garlic paste, chilly paste and tomato ketchup, and about a quarter cup of water, and let it come to the boil.

  6. Once the gravy (there should be just enough gravy to coat the veggies) thickens, transfer into a serving bowl..

  7. Add the garnish ingredients (mint, tofu and cabbage) as shown in the image above, and serve piping hot, with rotis(Indian flat bread)..

The base of Jalfrezi is a spicy tomato sauce traditionally simmered with onion, red bell pepper, and green chiles.

The flavorful sauce makes it an excellent match for tofu, hence this Tofu Jalfrezi recipe.

Tofu is a versatile culinary chameleon, taking on the flavor of any sauce or marinade in many different cuisines from around the world.

Jalfrezi is a semi-dry side dish recipe which is a blend of many vegetables, paneer or meat or fish or poultry and spices.

This dish came into existence during the British Raj in India and is believed to have been invented as a means to use left overs.
