Ingredients of Pojo Njeeri

  1. Prepare 2 cups of Pojo/dengu/green grams.

  2. You need 2 of big Carrots.

  3. You need 1-2 of big Onions.

  4. It’s 2 of Tomatoes.

  5. Prepare 4 of Potatoes.

  6. Prepare 1-2 of bells Green Pepper (hoho).

  7. You need 1 handful of or two of Dania (Coriander).

Pojo Njeeri instructions

  1. Make sure there are no stones or dirt in the pojo, wash then boil until soft but not disintegrated.

  2. Chop tomatoes, hoho, and onions + peel & dice the carrots then place aside..

  3. Chop the potatoes and boil for a few minutes, then place aside..

  4. Put cooking oil in a frying pan, fry some of the onions till theyve browned, then add tomatoes and the spices. Stir until it forms a thick gravy..

  5. Add the pojo, carrots and potatoes in turn. Stir the mix, then add very little water & let it simmer for a while..

  6. Add the green pepper and the remaining onions and stir, then after a while add the dania into the mix..

  7. Let it simmer for about a minute or three, then remove from the fire and serve with your favourite starch. I did rice..
