How to Refreshing Yummy Porridge Beans and Fried Plantain Delicious, fresh and tasty.

Porridge Beans and Fried Plantain. Nigerian Beans and plantain porridge is a meal made up of ripe plantains and beans. This is tasty dish and has become popular over the years , as most parents have discovered it as a way of getting their kids to eat beans. The addition of the ripe plantains, gives the meal , that sweet taste that kids love so much.

We had three different methods of cooking beans then, the plain beans porridge, the beans and yam and the beans and plantain porridge.

Beans and plantain was and still is my favourite.

A couple of months ago, a friend taught me a new method.

You can cook Porridge Beans and Fried Plantain using 9 ingredients and 6 steps. Here is how you cook it.

Ingredients of Porridge Beans and Fried Plantain

  1. Prepare 3 cups of Beans.

  2. You need 2 of cksp Palmoil.

  3. You need of Salt to taste.

  4. Prepare 2 of Maggi cubes.

  5. It’s 1 of big onions.

  6. You need 1 of cksp Crayfish blended.

  7. You need 7 of Fresh pepper.

  8. It’s of Groundnut oil for frying plantain.

  9. Prepare 1 of ripe plantain.

Homemade porridge beans and fried plantain is so easy to cook, I really love the aspect of frying the plantain because I must taste out of every batch fried….like keep testing.

I really like the taste of porridge beans especially when it is made with ripe plantain, I only learned recently to fry the plantain instead of the old way of adding them to the cooking beans.

When the beans porridge is soft, add the onions, crayfish (if using it), pepper and seasoning.

Note: To get the most out of beans, it is best to cook it with one of the following: sweet yam, ripe/unripe plantain, sweet potatoes or baby corn.

Porridge Beans and Fried Plantain step by step

  1. Parboil beans with a pressure pot for 30mins. Wash the beans and put back on the heat in a boiling water. As the beans starts boiling add sliced onion and salt..

  2. Leave it to boil for at least 15minutes.check the beans to make sure its tender. once it's tender add crayfish, Maggi and fresh pepper..

  3. Allow to boil for 10minutes.pour in palmoil and cover the pot and allow it simmer for about 7-10minutes.stir and taste for salt..

  4. Then turn off heat and set aside.

  5. Slice plantain and add salt and mix it very well. Heat up frying pan on heat.add groundnutoil onces is hot.add the plantain one after the other..

  6. Fry till is brown and done. Serve beans with fried plantain..
