It is usually served with kachumbari salad and ugali.

Ingredients of Ugali, liver and Kachumbari

  1. Prepare 1/4 kg of liver.

  2. It’s of Maize flour.

  3. You need of Onion.

  4. Prepare of Tomato.

  5. You need of Cooking oil.

  6. You need of Paprika/capcicum, pilipili hoho -optional.

  7. It’s of Cayanne/pepper - optional.

  8. It’s of Soy sause - optional.

  9. You need of Water.

  10. You need of Salt.

Nothing beats great combination of Ugali and maini.

Kachumbari is the Swahili name for fresh Tomato and Onion Salad, the basic ingredients here are tomatoes and onions, and the rest is up to the cook.

You can slice it, diced it, chop it, blend it … what ever rocks your boat.

I have tried it several ways and they all work.

Ugali, liver and Kachumbari instructions

  1. Ugali: Add water to a cooking pot till it boils. Add maize flour and begin ro stir briskyly till the mixture thickens and develops a firm texture.

  2. Liver: Add liver to a cooking pot, add 1/8 glass of water, some salt and let boil till the water dries up. Add finely chopped onions and some cooking oil then cover for 1- 2mins till the onion softens and becomes translucent. Add finely chopped tomatotes and pilipili hoho. At this stage, add spices of your choice including soy sauce to add the brown color. Stir and leave to steam for about 3-5mins then serve..

  3. Kachumbari: Mix finely chopped onions and tomatoes then add salt to taste.

Served along with Ugali (cornmeal) and Kachumbari (onions, tomatoes and coriander), Nyama Choma is beef roasted over an open grill and served in small bite-sized chunks.
