Ingredients of Odia sweet dahi vada and aalu dum

  1. You need of For vadas.

  2. It’s 2 cups of black gram lentils.

  3. Prepare 1/2 cup of cup rice.

  4. You need as needed of Salt.

  5. You need 1/2 tsp of red chilli powder.

  6. It’s Pinch of cumin seeds.

  7. It’s 2 cups of Curd.

  8. It’s 2 tsp of Sugar.

  9. Prepare 2 cups of Milk.

  10. Prepare of Mango flavoured ginger chopped.

  11. Prepare Chopped of Mint and coriander leaves.

  12. It’s As needed of Rock salt.

  13. It’s Few of Curry leaves.

  14. You need 1/2 tsp of Black pepper.

  15. You need 1-2 of Whole red chilli.

  16. It’s 1/4 tsp of Mustard seeds.

The vadas are comparatively smaller in size and the curd-base is also a little bit on the thinner side.

These Dahi Vadas are soaked in a spiced buttermilk and then served with spicy dum aloo and yellow peas curry aka ghugni.

As odd as it may sound the taste is just opposite to it.

It's a savotu Dahi Vada in contrast to the North Indian sweet and tangy Dahi Vada served with chutneys.and it's a crowd pleaser not just a chaat or appetizer.

Odia sweet dahi vada and aalu dum instructions

  1. For vada. Soak lentils and rice for 5 hours. After did grind it in smooth batter.

  2. Beat with hand. Mix cumin seeds. Red chilli and salt.

  3. Make vada shape and deep fry till golden brown. Dip in milk.

  4. Now add sugar,salt,black pepper,rock salt,mango ginger,plain ginger,mint and core under chopped leaves in curd.

  5. Now take a pan. Add oil. Add curry leaves,mustard,red chilli,,,fry and cool it. Pour this on curd.

  6. Now mix vada in curd,take out from milk.

  7. For aalu dum,,take a pan heat oil,add chopped onion,chopped tomato,,ginger garlic paste. Garam masala, Add red chilli and turmeric,,cumin coriander powder,salt,,cook it well for 10 min on low flame.

  8. Now add potato cook for 15 min..add coriander leaves.

Vada is pronounced as Bara in Odia.

So here also the hot deep-fried vada is dipped in curd and spiced.

In North Indian dahi vada, it's flavored with sweet tamarind chutney and spicy green chutney whereas in Odia Dahi Bara it is always paired up with dum aloo, a spicy potato curry.

This combination of dahi bara aloo dum is divinely yummy.
