In Bengal, spinach curry (Palong shak ghonto) is very popular and I love this winter food since my childhood.

The bori or vadis add a nice bite to the dish and though I am not really picky, but Urad.

Today I bring to you a typical Bengali recipe - palong shaker ghonto - which is a scrumptious mixed veg dish primarily dominated by spinach i.e. palong shaak.

Out of many traditional Bengali recipes that I grew up on, if one recipe stood out most prominently and etched a permanent mark on my soul as well as taste buds, then that has to be.

Palong Shaker Ghonto is basically a Vegetarian dish prepared with various veggies that include Eggplant, Radish, Potato etc. and obviously Spinach plays the lead role!

In Bengali, Ghonto stands for a semi massed mixed-Veg and it is mostly tempered with Bengali five spices which are known as Panch Phoron.

Palong shak ghonto or Spinach mixed vegetable Curry step by step

  1. Soak the spinach for 15 minutes and rinse thoroughly several times before using.separate leaves from the stalks..

  2. Pile spinach into a pan and add chick pea.sprinkle some salt and steam on medium heat for 8 minutes..

  3. Take another pan and heat oil add dried red chillis, Bay leaves, cumin seeds.stir the spices and add potato, bringal, pumpkin.remember to keep heat low, stir regularly and cover the pan..

  4. Lightly squeeze water from spinach and sprinkle on the vegetables in to the pan and mix together nicely and cook for 5 minutes..

  5. Add sugar and continue cooking on low heat until veggies are done..

  6. Spinach vegetables Curry is ready. garnish with some coriander leaves..

Here I must mention, I do use the radish leaves as well along with.

This Palang Shaak er Ghonto or Spinach with a medley of vegetables is cooked a little different from my Mom's.

Every home has its own little tradition of cooking the exact same dish and so taste of the same dish varies from one home to other.

While my Mom uses dhone-jire-ada bata, this one solely relies on Paanch Phoron and Roasted Cumin powder (Bhaja Jire Guro) to create magic.
