Egg Kothu Parotta. Egg Kothu Parotta (Paratha) is simply leftover parotta sauteed along with onions, Indian spices, plain salna and most importantly eggs. It is commonly known as Muttai Parotta or Muttai Kothu Parotta. This type of paratha is a very famous Street Food in Tamilnadu, India.

Muttai Parotta as it is called in Tamil Nadu is a dish based on a the Sri Lankan version, where it originated as Kothu Roti.

It is made using paratha , eggs, some meat, and a spicy curry or gravy that are tossed together in a hot cast-iron griddle with sufficient oil.

Egg Kothu Parotta recipe is the best way to use up leftover rotis or parathas, with the heartiness of sauteed vegetables and scrambled eggs.

  1. You need 6 of Parotta cut into small diagonal shapes.

  2. Prepare 1 of medium size Tomato.

  3. Prepare 1 of medium size Onion.

  4. Prepare 1/2 of carrot.

  5. Prepare 5-6 of beans.

  6. It’s 1 of small Capsicum.

  7. You need 1/4 cup of frozen peas.

  8. Prepare 2 of red chillies or 2 green chillies according to availability.

  9. Prepare 2 teaspoon of Crushed Ginger garlic.

  11. It’s 1/2 teaspoon of Turmeric Powder.

  12. Prepare 2 teaspoon of Chilli Powder.

  14. It’s 1/2 teaspoon of Garam masala powder.

  15. You need 1/4 teaspoon of pepper powder.

  16. It’s 1 table spoon of red chilli sauce or green chilli sauce.

  17. It’s 1/4 table spoon of soya sauce.

  18. Prepare to taste of Salt.

  19. Prepare to taste of Sugar.

  20. It’s as required of Mustard seeds, Cumin Seeds, Fennel seeds, Curry leaves for spluttering.

  1. Put 1 teaspoon of oil in a hot kadai add Mustard seeds, fennel seeds, cumin seeds & curry leaves to splutter then add crushed ginger garlic, green or red chillies, Sauté for 2 min then add onion,carrot,capsicum,beans & peas. Sauté for another 5 min then add tomato & sauté for 3 min. Add all the powders. Cover up & cook for another 10 min. Then add the sauces, salt & sugar according to taste.

  2. Then take an iron dosa tawa put on medium flame.. let it get hot.. after that add 1 teaspoon oil then crack two eggs & then beat using a ladle. Then add the gravy you prepared, then beat it accordingly. after 3 min add sliced parotta, then beat accordingly all the masala need to be coated on Parotta. Then sprinkle some coriander leaves & squeeze one lemon juice..

  3. Serve hot with onion cucumber raita..
