Porridge beans and plantain. Nigerian Beans and plantain porridge is a meal made up of ripe plantains and beans. This is tasty dish and has become popular over the years , as most parents have discovered it as a way of getting their kids to eat beans. The addition of the ripe plantains, gives the meal , that sweet taste that kids love so much.

Beans and plantain was and still is my favourite.

A couple of months ago, a friend taught me a new method.

  1. You need 3 cup of beans.

  2. It’s 4 of finger plantain.

  3. You need 1/2 cup of palm oil.

  4. Prepare 7 of fresh pepper(blended).

  5. You need 1 of onion bulb (chopped).

  6. It’s 3 of maggi cube.

  7. Prepare to taste of Salt.

  8. It’s of Anara leaf sliced.

Beans are cheap and nourishing and a porridge made with beans is a delicious experience.

Many Nigerian meals are made with beans.

Depending on a recipe, such a porridge can be a fast and cheap meal but sometimes you may want something more exquisite.

Porridge beans and plantain step by step

  1. Wash and boil beans till tender with pressure pot 20min.Rewash beans and keep it aside..

  2. Peel plantain and boil for 10min.Put a dry pot on heat,add palm oil,onions and pepper stir for 3min..

  3. Then pour the boiled beans,maggi,salt then stir, cut boiled plantain into bits and add.Mix everything together allow for 3min..

  4. Then serve in a plate and add sliced Anara leaf..

When the beans porridge is soft, add the onions, crayfish (if using it), pepper and seasoning.

Note: To get the most out of beans, it is best to cook it with one of the following: sweet yam, ripe/unripe plantain, sweet potatoes or baby corn.
