  1. For luchi:- add flour,salt,oil for moyan and lukewarm water.mix it.and make a soft dough.keep aside for some time..

  2. For dum aloo:- Heat the 4-5 tbsp oil in a pan.prick potato with the help of a fork or knife.now add these potato in pan and cook until become brown.add salt,1/2 tsp turmeric and 1/2 tsp red chilli powder and saute for 5 minutes on low flame.and take out these potatoes in a bowl..

  3. Now heat same pan with left oil.add cinnamon, cardamom,cumin seeds and bay leaf.saute for 1 minute.add ginger garlic paste and green chilli.saute for a while.add onion paste.cook it when it becomes brown add coriander powder, turmeric powder,red chilli powder and salt.mix it.cook it for 5-7 minutes on medium flame..

  4. Now add tomato and beetroot puree.saute for 1 minute.after that add curd and mix it very well.Add sugar and roasted Fenugreek leaves and mix it. add 11/2 cup water.bring a boil then add potatoes in it.cook it for 7-8 minutes on low flame.now your Bangali dum aloo is ready.

  5. Now make small balls from the dough.heat the oil in a wok for frying.make small poori from these small balls. Fry in oil.now luchi ready to serve..

And it pairs very well with vegetarian and non vegetarian side dishes.
