Upma is a flavorful South Indian breakfast dish made from rava or cream of wheat.
This traditional dish involves cooking roasted rava in water that has been flavored by ghee (or oil), cashews, urad dal (lentils), chana dal (husked chickpeas), onion, ginger and additional herbs and spices.

Upma step by step

First slightly dry roast semolina in a pan on low flame..

Heat oil/ghee in the pan and add the mustard seeds, urad dal,chana daal and curry leaves. When the dal turns golden brown and the mustard seeds splutter, add cumin seeds along with pinch of hing.add sliced onion stir well and cook until slightly change in colour..

Now add chopped tomatoes, green chillies and salt, (you can add the peas and vegetables of your choice in this stage). Mix well and cook closed until the tomatoes/ vegetables turn soft on low to medium heat..

Now add Sambhar masala and roasted semolina and mix well.add about 1,1/2 cup of water and let it come to a boil on high flame.after that reduce the heat and cook covered for for around 3-4 minutes..

In last add some roasted cashews, lemon juice and fresh chopped coriander and mix everything well.Delicious upma is ready serve hot..
